Banana Shrub Love!

I am in love with shrubs! Who isn’t?? If you haven’t tried making it please give this one a shot! You won’t be disappointed! Below is the recipe for Banana Shrubby Love Boat:

  1. 2 oz Coconut Greek Yogurt washed Gin
  2. 1 oz Banana Shrub made with Rice Vinegar, white sugar, with banana skins on
  3. 1 oz Pineapple Juice
  4. .25 oz fresh squeezed lime juice
  5. One egg white

*Combine all ingredients in a cocktail shaker and shake your little heart out! The faster you shake the better foam you will get from the egg white! Pour into a martini glass and serve! Cheers!!

 

In the above photos I did several trial runs with the banana shrubs as you can see! I left the skins on for some and one with the skin off, also using different vinegar. The best one that highlighted the banana flavor was the less acidic rice vinegar with the skins on! Leaving the banana skins on creates a wonderful aromatic flavor, leaving it not too sticky sweet. If you want a sweeter version take the skins off, the one I did turned out to be more syrupy. It is completely up to your pallet which one you can use!

The little jar is the coconut greek yogurt washed Gin. I combined 2 oz yogurt to 6 oz Gin and let it sit for two hours, then strained through a coffee filter. Patience is key here folks! It took two hours for it to be completely strained! But it is worth it!
